Veggie Pasta with Turkey Bacon


This is one of my fav go to recipes - as its one the whole family enjoys, that does not happen often!! We all love Mac n Cheese - this recipe is great as you get that cheesy flavour but with lots of hidden extra veg... Inspired by the lovely @foodmedic - Ive added a couple of my own ingredients to suit us!! It is delicious - perfect for a cold evening, kids coming home from school and the perfect post exercise meal!



Ingredients

  • 1 Large butternut squash - deseeded and chopped

  • 1 small head of broccoli, broken into florets

  • 1 large onion

  • 1 red chilli

  • 1 garlic clove

  • 1 Handful cashew nuts - soaked with boiling water

  • Cup of Milk

  • Large handful of grated cheese or to taste

  • Turkey Bacon fried or grilled

  • Nutritional flakes (optional)

  • Pasta of your choice, I love using big pasta here - cooked and cooled



Cook your pasta in lots of boiling water and run under a cold tap to cool

Boil, roast or steam your butternut until tender

Chop onion, garlic and chilli, fry gently - adding in your finely chopped broccoli and

fry for a further few mins until it softens (I chop my broccoli into tiny pieces very

roughly)

Fry up your turkey bacon it your using and shop finely

Pop the butternut and all the veg into a food processor, add in soaked cashews, milk

and cheese to your tasting - some salt and pepper and blast, adding in more milk if

needed to a creamy consistency

Pour the sauce into the pasta, transfer to an oven proof dish, mix in the

turkey bacon and cover with grated cheese of your choice..pop into the

oven for 20 mins before serving, this keeps really well in the fridge and can

be made day before....its soooo good!
